Active Dry Yeast

Saf-Levure

Saf-levure is dehydrated active dry yeast (92-93% dry matter). It comes in granular form giving it extreme stability at room temperature and good .shelf life

Saf-levure is suitable for all baking processes. It is simple to use, needing only to be rehydrated in water between 35 – 40°C. Within a short time the yeast suspension will begin to show fermentation bubbles, indicating that it is ready for use.. Saf-levure is particularly suitable for humid climates.

DCL Active dried Yeast

DCL Active dried Yeast is a high-performance yeast with consistent quality. DCL Active dried Yeast is simple to use but the careful observance of the correct usage level and dough processing temperature is important for best results.
the usage level will depend on the product and process being used. For more information please contact info@lesaffre.co.uk, prior to use, the yeast should be suspended in warm water at 35°C-38°C (95°-100°F) containing 0.5% sugar relative to flour weight, for approximately 15 minutes.

Instant Dry Yeast

DCL Instant Yeast

DCL Instant Yeast (IDY) is a standard yeast for lean doughs, containing less than 5% added sugar.

DCL Instant Yeast is ready for immediate use. It can be added directly to the flour and lightly dispersed before adding the other ingredients and normal mixing.

Bruggeman Instant Yeast

Bruggeman Instant Yeast is available in two types:

  • Bruggeman Instant blue: the yeast that sets the quality standard, suitable for almost every recipe and every baking technique (doughs, puff pastries, sweet dough with up to 10% sugar).
  • Bruggeman Instant brown: also called SD or “Sugar Dough”. This yeast is more appropriate for sweet dough containing a lot of sugar (5 to 30% or even more) (e.g.: croissants, etc.).

Saf-Instant Yeast

Saf-instant is the first instant dry yeast released to the bakery market. Easy to use and requiring no rehydration, Saf-instant is an instant dry yeast that has proven its value since it was first launched in 1973. Its small, dehydrated vermicelli provide concentrated performance and simplicity in use, for it can be poured directly into the mixer. Saf-instant Red, which is especially suited for lean or low sugar doughs, is now joined by Saf-instant Gold, developed for sweet doughs containing more than 5% sugar.
